रवा लाडू

Rava ladoo

Rava and coconut roasted in ghee, then set with sugar syrup. Soft, and they keep through the whole of Diwali.

40 min, plus 1 to 2 hours to set · Makes about 20

Eat it with

You need

  • 2 cups fine rava
  • ½ cup cow ghee
  • 1 cup fresh grated coconut
  • 1½ cups sugar
  • ¾ cup water
  • ½ tsp cardamom powder
  • Cashews and raisins, fried in a little ghee

How we make it

  1. Roast the rava in the ghee on low for about 15 minutes, until it smells toasted and is barely golden.
  2. Add the coconut and roast 5 more minutes, until the moisture is gone.
  3. Boil the sugar and water to a one-string syrup: a drop pressed between finger and thumb pulls one thread.
  4. Pour the syrup over the warm rava, add the cardamom, cashews and raisins, stir, cover and leave 1 to 2 hours.
  5. When it holds when pressed, shape into ladoos. Too dry? A spoon of warm milk. Too soft? Wait a little longer.
