वरण भात

Varan bhaat

Plain dal and rice with no tadka. Ghee, a squeeze of lemon and a piece of mango achaar do the work, which is why this is the plate our mango achaar is made for.

30 min · Serves 3

Eat it with

You need

  • ½ cup toor dal
  • 1 cup rice
  • ¼ tsp turmeric
  • A pinch of hing
  • Salt
  • A small piece of jaggery (optional)
  • Ghee and lemon to serve

How we make it

  1. Wash the dal and the rice separately.
  2. Pressure-cook the dal with 1½ cups water, the turmeric and hing for 4 to 5 whistles. Cook the rice with 2 cups water in a separate container.
  3. Mash the dal smooth. Add salt and the jaggery, thin it with a little hot water and simmer for 2 minutes. No tadka: plain varan is the point.
  4. Rice on the plate, varan over it, a spoon of ghee, a squeeze of lemon, and the achaar on the side.
